Coconut Whipped Cream

Dairy-free Coconut Whipped Cream Recipe

Whipped cream is one of those toppings that can go with anything and make everything taste better.

It’s perfect on top of a slice of key lime pie or a cup of chocolate mousse. My husband loves it on top of a banana split, I love it on top of my Banana Cream Pie Smoothie, but it’s also simple enough to eat with a bowl full of juicy strawberries. [Read more…]

Pina Colada Shrimp with Pineapple Salsa

July 14, 2015 By Linda Warren Leave a Comment

Pina Colada Shrimp main

What could be better than crystal clear blue skies, swaying palm trees and a pina colada in hand? Umm, nothing! Living in Florida I get the gorgeous weather all year long but I really enjoy a pina colada the most when I head to my favorite vacation spot, Key West. And when I think of Key West I think of Key West pinks, aka shrimp, which is what inspired me to create this yummy recipe for Pina Colada Shrimp. [Read more…]

Strawberry Pina Colada Smoothie

March 12, 2015 By Erica Acevedo 1 Comment

Strawberry Pina Colada Smoothie

This Strawberry Pina Colada Smoothie may look like a cocktail, but I promise you, this vegan, gluten-free treat is meant for breakfast!

So after the sugar fest that was Tuesday’s s’mores recipe, I decided I need to clean up my noshing habit a bit and try to snack a little bit on the healthier side. So, of course, I’m here to share the tasty results of my latest experiment with you!

Let me just put this out there; in case the name of my blog didn’t give it away, I adore sweets and desserts – chocolate, ice cream, cupcakes, brownies – they’re mostly my favorite things to eat in the world. I rarely skip dessert when we go out for dinner, and I almost always have some sort of sweet snack somewhere in the house. I’m also a wannabe gym rat, and I have a pretty good grasp on moderation.

When I’m on my game (meaning meal prepping, lifting/working out 3-4 times a week, and generally giving 100% to my healthy life regimen), I make smoothies for breakfast every morning for myself and my husband, so I feel like I’m pretty good at coming up with tasty flavor combinations. Pina Coladas are one of my favorite cocktails to indulge in, so I figured it would make for a killer smoothie since the ingredients are fairly similar.

Then, I decided to toss some strawberry puree in the mix, and all of a sudden it became a Lava Flow, and I immediately wished I was on a cruise ship in the middle of the ocean, listening to steel drums and soaking up some sun by the pool. [Read more…]

Citrus Salad with Toasted Coconut & Pistachios

Citrus Salad with Toasted Coconut and Pistachios

I’ve been trying to eat a more healthful diet since falling off the clean-eating wagon during the holidays and being run over repeatedly.  And then there’s the blog.  Someone has to sample my recipes before I share them, right?  I’ve officially delegated that entire job to my husband, my children and whoever happens to be at my home or walking by . . . for now.  And what about winter?  Why do I seem to eat more during winter?  It’s not like I’m preparing to hibernate or anything.

We haven’t experienced too much cold weather here in the south (yet), but we have had an unusual amount of rain and cloudy days that seemed to turn into weeks.  It could be downright depressing for a sun-loving girl like me if I didn’t have my citrus salad with toasted coconut and pistachios to cheer me up. It’s healthy, delicious and nutritious!

I was going to call my salad a deconstructed citrus salad with toasted coconut and pistachios and citrus balsamic vinaigrette, but man, that’s a mouth full!  So I just gave it a nickname.

My citrus salad is light, refreshing and provides a crunch from the coconut and the nuts.  The vinaigrette provides a smooth, sweet finish to this perfect winter dessert or snack.
