Hummingbird Cake

I finally got around to baking a Hummingbird Cake! Yay me! Now, some of you are probably saying, what in the world is a Hummingbird Cake? Well, I would have said the same thing a few years ago but, since then, I have had a piece in almost every restaurant that advertises it in the Florida Keys. I kept telling myself I was going to make one day, and it would be even better than any I had tasted, and that day finally came. And I couldn’t be happier with the results (although my waistline might complain a little because it’s so hard to resist!).

The cake turned out rich, spicy, a little nutty and full of the fruity goodness of bananas and pineapple. It’s a tropical treat not to be missed!

Have you ever heard of a clafoutis? I hadn’t until I stumbled upon one on Pinterest randomly one day. I thought it was just a cake, until I saw what the inside looked like.

I was intrigued.

A clafoutis is what you’d get if a pancake and a custard had a baby.

A delicious, fruit-packed, eggy baby, dusted with powdered sugar and (ideally) topped with sweet whipped cream.

Traditionally, the French clafoutis is made with cherries, but I switched it up and used the fruit I had in my fridge to bring you this Blueberry Pear Clafoutis. [Read more…]

Pineapple Delight Trifle

Pineapple Delight Trifle is one of those recipes where I took a little bit of this and a little bit of that from several recipes and created a new and better recipe.  Sometimes I just love to play with my food and come up with an exciting and tasty recipe and that’s exactly what happened when I created this delightful concoction.

This is another no-bake dessert because, really, who actually bakes in the summer time?  Not this girl! Every dessert I’ve made lately seems to have ice cream or whipped cream as an ingredient.  I just crave real simple, real cold foods this time of the year. [Read more…]
