Quick Gluten Free Breakfast – Egg on a Pesto Filled Portabella

All right, I am going to bring it up: New Years Resolutions.  There I said it.  I’ll let it sit for a few moments…. Okay now that we got the awkward part out of the way let’s get down to it.  I know you want to ignore them and just give up but come on! Let’s dust them off and see what our batting average is this April!  I have more than a few that I am still pretty far away from, but one that I have been really enjoying is the challenge of eating breakfast.   Now I used to live in Manhattan and breakfast was a cup of coffee (if I was lucky) and for a really special day I would have a yogurt.   But this year my health is of the essence which makes getting a healthy and protein/veggie rich start to my day even more imperative.

Wanting to get a good start to your day with breakfast is all well-and-good but what about the time! This is something I battle with on the daily.  I have so much to get done in the morning before I jet to the office.  So lately, I have been wracking my brain to think of grain free, quick, delicious breakfast ideas.  Because, let me tell you, if it isn’t tasty, it really doesn’t matter how healthy or quick it is.

Goat Cheese & Pesto Stuffed Chicken

April 15, 2014 By Madison Wetherill Leave a Comment

Happy Tuesday, friends! It’s Madison again from Wetherills Say I Do.

Do you ever try something at a restaurant and know that you have to make it at home sometime? Well that’s how this dish got started in our house. We went to a local restaurant called J.Peppers where I had the most divine meal ever. As you probably guessed, it was a chicken breast stuffed with goat cheese and pesto. Within a week probably, I redid the meal at home. Now it’s become one of our favorites!

We eat chicken a lot in our house and I love how easy it is to dress up chicken by stuffing it with some of your favorite ingredients. The other night I bought some goat cheese for another recipe and knew it would be a perfect weekend dinner to do our favorite stuffed chicken recipe!

One-Step Homemade Butter + 5 Recipes

April 8, 2014 By Erin Kennedy Leave a Comment

Have you ever thought of making your own butter? Or ran out of butter, but couldn’t run to the store? Did you know that you can make your own butter in just two-steps with 1 or 2 ingredients?

I had no idea either.

But, you can take some heavy cream, whip it up and make some delicious, fluffy butter. It is ideal for those recipes on pinterest where they make their gourmet butter with herbs and spices.

Ingredients

  • 1 cups heavy cream
  • 1/8 teaspoon salt

Place in food processor and mix until you reach the consistency you desire. If you like your butter a little loose and spreadable, don’t mix as long. You may need to press your butter with the back of a spoon to get rid of the excess liquid.

If you would like to make gourmet butter, add your ingredients with the liquid before turning into butter. Refrigerate and serve. Mold into butter logs if desired.

Busy Girl’s Bruschetta

April 4, 2014 By Madison Wetherill Leave a Comment

We all have those weeks. Ya know, the crazy ones. We won’t go into detail but the bottom line is, even when weeks are crazy and life is out of control, girl’s still gotta eat! And just because it’s busy, doesn’t mean what you’re eating can’t still be deliciously gourmet tasting.

Now that springtime has finally decided to show up, I am really excited to use fresh produce and there’s nothing better than fresh tomatoes in my book. I’ve had quite a few variations of bruschetta, including a goat cheese and red pepper bruschetta last weekend! But when I want that authentic Italian taste and summer feeling, I go for a very traditional bruschetta recipe.

Bruschetta ingredients are so simple and a lot of the time I have them all already. Sometimes I opt for fresh basil but this time I just used dried basil because I really wanted to hone in on the delicious tomato taste. Therefore I kept the distractions to a minimum.
