Gluten-Free, Dairy-Free Avocado Chocolate Chip Pudding

I am in LOVE with this pudding!

Chocolate pudding has always been one of my go-to comfort foods. It’s rich and creamy and a perfect ending to lovely dinner.

It’s also great as a mid-day snack for my little one. But these days, we are all gluten-free & cow dairy-free so pudding has been removed from our home….UNTIL NOW!

It’s apple season!!! Yayyyy! McIntosh and Granny Smith and Honeycrisps, oh my!

One of the things on my bucket list is to visit an apple orchard and pick my own apples. My home state doesn’t have any, sadly (orange groves and strawberry patches for miles, though), but one of these days I’m gonna get to one, and then my only problems will be which apples to eat first, and how to get them all home!

These cooler days definitely call for comfort foods, and what better way to say comfort food than a little heavy cream? 😉 I love that when I add it to anything, the dish immediately becomes that much more decadent. This dish is so savory and delicious, I couldn’t stop sneaking bites while it was cooking and after before serving it to my family!

We have used this as a warm side salad, and even topped a pizza with it along with some sliced up sausages and cheese. I happen to think it would make an excellent side to your holiday dinners as well! Who’s excited about Thanksgiving?!

Hey y’all! Stephanie from Sustaining the Powers here again. I have a quick holiday treat go-to recipe to share with you today – Carrot Cake Mix Cookies. I don’t know about you, but in my family, Carrot Cake is eaten year round, not just at Easter. We especially love it around Halloween and Thanksgiving because of its mix of fall spices and its fun streaks of orange color from the carrots. Plus it’s a vegetable, so that makes these more “healthy” right? Breakfast cookies maybe?
