Pumpkin Pie Smoothie Bowl

Fall is here and nothing reminds me of the season more than pumpkin. It doesn’t seem to matter what form it takes, I love pumpkin anything!

But put pumpkin in a smoothie bowl – and it just about tops everything else pumpkin! So now you are probably asking yourself, what’s a smoothie bowl? Well, it’s exactly what it sounds like. A smoothie that is made thick enough to place in a bowl and eat with a spoon. The best thing about smoothie bowls is you can top it with your favorite healthy toppings, anything from granola to berries, sliced fruit to nuts and seeds or even dates and extra spices. This makes a smoothie bowl so much more satisfying than a smoothie in a glass. It’s that spoon/fork to mouth relationship with food that gives you the feeling that you actually ate a meal rather than just sipped a drink. In other words, it’s perfect!

Banana Bread Doughnuts (Gluten & Sugar Free)

Since the moment we walked into our apartment from our honeymoon, my husband has been asking for doughnuts. The idea of getting a homemade version of his favorite treat was a huge thrill for him. I pinned away many hours looking for fun new recipes to try, along with the newlywed dinner recipe collecting and home decorating “research” I was doing.

But, despite my recipe collecting, my sweet husband continued to consume greasy, frosted doughnuts from the corner shop for the last couple of years. I didn’t have a doughnut mold! Finally this Christmas I put it on my gift list… as a gift to him of course!

It’s priceless watching his eyes light up as he notices a batch of freshly baked doughnuts on the kitchen counter.

Kale and I have a history of misunderstandings.

In fact, it wasn’t until we moved to Dallas that I cooked kale at home. I’d tried kale at restaurants, and it wasn’t my favorite, so I never attempted to make it on my own… and then we joined a CSA.

With our CSA that fall and winter, we received bunches upon bunches of collards, mustard greens and kale. I, obviously, had no idea what to do with them, but that quickly changed since we had so many that needed to be consumed.

I haven’t always been a sweet potato fan, and thinking about that now makes me a little sad because sweet potatoes are awesome and oh-so-versatile.

Now, I’m a huge proponent of breakfast, and when I was training for a marathon this spring, I started experimenting with foods to eat before and after long runs, including foods to eat the day before these behemoth workouts. (Because I quickly learned, if you’re running 16, 18, 20 miles? One meal the night before ain’t gonna cut it and give you all the goodness you need to make it through!)
