It’s a great day for a holiday, don’t you think?

Happy Thanksgiving to all of my fellow Americans! Today is one of my favorite holidays as a foodie, for obvious reasons – it’s all about eating!! I love taking a classic recipe and getting creative with it – putting my own spin on it, and really making it my own. I can’t wait to be able to share those kinds of recipes with my future kids and grandkids, and maybe one day in the future, they’ll call my recipes classics.

Of course, Thanksgiving is an all-day event, spent mostly in the kitchen and over the stove. But before you toss that turkey in your oven, why not treat your family to an equally impressive breakfast? Sundried Tomato, Olive, Cucumber and Walnut Salad

Greek SAladI’m a sucker for a good salad. It’s so easy to throw together a salad that’s filling, delicious, and not boring. This salad fits all of those criteria.

I love the combination of kalamata and olives and sundried tomatoes, and include both of them in all of my Greek-inspired recipes.

I also added in cucumbers and walnuts in addition to the olives and tomatoes, and the combination was magical. [Read more…]
